Then, in a separate mixing bowl, you will mix the dry ingredients. First, put your 1 1/4 cup of whole wheat flour in the bowl. Add 1/3 cup of unsweetened cocoa, 1/4 teaspoon of salt, and 1 and 1/2 teaspoons of baking powder.

Mix all the dry ingredients in the bowl, then slowly add them to the butter and egg mixture. Be sure to add this slowly to the mix, only adding about 1/4 cup of dry mix at a time. Blend for 30 seconds each time you add another serving of dry mix.

Once these dry ingredients have been added to the butter and sugar substitute, use a spoon or spatula to mix the dry powder together. Then use the hand mix for about a minute to mix all the ingredients well. Make sure the dough is smooth and lump-free.

Next, add the dough to a metal loaf pan. Bake the cake at 350 Fahrenheit for about 30-35 minutes. Insert a toothpick after 30 minutes to test if the cake is done.

CARROT CAKE WITHOUT SUGAR

6 egg whites

You will use your fork to add the last ingredients. Start by stirring in the nutmeg, cinnamon, baking powder, and baking soda. Mix it all together with your fork. Slowly add the flour. Add the carrots. Finally add the raisins and walnuts. These last two items are optional, and you can substitute pecans, almonds, or any other dried fruit for the walnuts. Use your fork to stir the mixture for another 1-2 minutes. The mixture will be lumpy instead of smooth.
